Plant Based Recipes: Thai Carrot Sweet Potato Soup

The Winter months are upon us, and the weather is getting colder, which means its time for fuzzy socks and relaxing by the fireplace! After a long day at work or school, all that sounds good is a nice bowl of warm soup. This creamy Thai carrot sweet potato soup is perfect for the occasion, and bursts with flavor. Thai food is personally one of my favorites, and this soup brings all of the authentic flavors into your bowl. Angela Liddon, the author of the Oh She Glows Every Day cookbook says "This is my favorite blended soup, and we've been making it once a week during the fall and winter seasons."

The first thing that you have to do is chop all of the carrots and sweet potatoes. The total prep time is 25 minuets, however this took me about 40 minuets to do, because i am definitively not the fastest chopper. You needed a total of 6 cups of carrots and sweet potatoes, so this recipe is good for getting a veggie filled meal. While you are chopping, you can start the meal, and the first step is to saute onion, garlic and ginger for 5 to 6 minuets. Many flavorful ingredients go into this soup, including red chili paste, which gives it a strong and unique flavor.

After adding all of the other ingredients, which includes things like vegetable broth, peanut butter, and salt and pepper, the soup only takes about 15-20 minuets to cook. This cook book provides many different recipes that are easy for busy nights, or rushed days. You know it is ready when the "carrots and potatoes are fork tender" (Liddon, 141). The next step, and the most important part to this soup, is blending it in the blender. This will blend up all the carrots and potatoes, including the other ingredients like onions and garlic. This leaves the soup with a nice and creamy texture. The book suggested minced cilantro, peanuts, and fresh lime juice as toppings, so i added some to my soup.

Overall, i think that this soup was really delicious and had a lot of flavor. The book helped give me ideas about different ways to incorporate vegetables into food, and how to make it taste good! Do you think this recipe is worth trying, and do you think you would like it?

    1. Yes, i would recommend it! it has a wonderful array of different ingredients, and displays authentic Thai flavors. It really is a delicious soup, and these flavors would also be great in other recipes as well!

  2. Hi Kaitlyn! As a vegetarian, I find this recipe very interesting to try out, your directions on how to chop the carrots make this recipe look a lot easier to accomplish. This soup looks amazing, and I cannot wait to try out this recipe on my own!
